We have fun recreating famous and traditional dishes such as Pizza and spaghetti using only dehydration, fermentation and sprouting as cooking tecniques.

We have decided to design and follow a restaurant concept that gives us the opportunity to deliver a fine dining exerience with natural wine and tasting menus and at the same time a cozy and informal evening to all those that wish just having an healthy pizza with friends.

Our goal is to create every meal an explosion of taste in your mouths and colors on your tables!


Our menu changes with the seasons and we offer in according with the time of the year, also special dishes and tasting menus.  

We have all year around a 6 courses tasting menu called "THE RAW KITCHEN EXPERIENCE" which includes all the best from our menu, from the starters to the desserts (aged cashew cheese included!).

We recomend to all those new to raw food to try it and get all the best in one unique experience!

Proudly produced by the chef owner, now producing at the CASHEURY cheeze factory,  our cashew cheeses are incredibly popular between vegans and those who want to try something unique.


We offer some evergreen cheeses like:

  • the mould ripened BRIE, BLU, CAMEMZOLA, ASH-BRIE
  • the creamy MIX PEPPER, HERBES DE PROVENCE, ITALIAN HERBES, BRUSCHETTA, LEMON PEPPER
  • the aged cashew ASH BLACK GARLIC, PURE WASH RINDED, ROSE PEPPER

KELP NOODLES CACIO&PEPE (kelp noodles, cashew black pepper sauce, served with cashew parmesan and microgreens)



MUSHROOM BURGER served with mustard sauce, smokey cashew sauce, home made sauerkraut, pickles, avocado, dehydrated root chips, kale chips and alfa alfa sprouts.
